Granola Bars Recipe

We all love a nice, soft chewy granola bar.  But wouldn't it be nice if we could get a healthier protein-packed option?

My kids cannot get enough of these and it's definitely made from ingredients I feel good about giving them.


Ingredients:

1c homemade peanut butter (or store-bought should work too)

1/3c maple syrup

2 1/2c rolled oats

Optional: protein powder (1-2 scoops) or other mix ins such as chocolate chips, nuts, etc. 


Instructions:

1) Line a baking pan with parchment or wax paper.  (Granola bar pans work great too if you have one)

2) Melt peanut butter and maple syrup together in microwave in 15-20 sec increments.  Mix between heating increments.

3) Once melted, add oats to peanut butter mixture and protein powder or other add-ins if using them.  Mix thoroughly.

4) Spread onto baking pan so they are tightly packed and flat.  

5) Freeze for 30 min or until complete chilled and slice into bars and store in air tight container in the refrigerator for 1-2 weeks.
